Stuffed Chips:
Masa (2 Cups)
Water (1 1/2 Cups)
Manchego Cheese (1 Cup, or Mozzarella)
Olive Oil (To Fry)
Green Tomatillo Sauce:
Garnish:
Red Onion (Sliced)
Eggs (Fried)
STEPS:
Prepare Green Tomatillo Sauce:
Boil the green tomatillos, serrano peppers, sweet onion, and garlic cloves for 10 minutes until softened.
Once boiled, transfer the veggies to a blender. Add chopped cilantro and lime juice. Blend until smooth. Season with salt to taste. Set aside.
Prepare Stuffed Chips:
In a large mixing bowl, combine MASA with water to form a soft dough ball.
Divide the dough into 19-20 individual balls (1oz each).
Using a tortilla press, press each dough ball into tortillas about 5 inches in diameter.
Fill each tortilla with a handful of Manchego cheese, fold, and close to form stuffed chips. Cut in half down the middle and set aside under a damp cloth.
Fry the Stuffed Chips:
Heat oil in a medium saucepan over medium-high heat.
Fry the stuffed chips in batches, boiling on each side for 1 minute. Transfer to a cooling rack to drain excess oil.
Assemble and Serve:
Heat the green tomatillo sauce in a medium saucepan over medium-high heat for 30 seconds until sizzling.
Arrange the stuffed chips on a plate. Drizzle the warm sauce over the chips.
Garnish with sliced red onions, crema, queso fresco, and a fried egg.
