STEPS:

  • Marinate the Chicken:

    • In a large Ziplock bag, combine all the marinade ingredients: seasoning sauce, brown sugar, rice vinegar, minced garlic, bay leaves, and Thai chili peppers. Add the chicken thighs to the bag and ensure they are coated evenly with the marinade. Marinate for 4 to 24 hours in the refrigerator for best flavor.

  • Cook the Chicken:

    • When ready to cook, remove the chicken from the marinade and pat dry with paper towels.

    • Heat oil in a large pan over medium-high heat. Sear the chicken thighs for 2-3 minutes on each side until golden brown.

  • Simmer the Chicken:

    • Pour the remaining marinade from the bag into the pan with the seared chicken.

    • Add water and peppercorns to the pan. Season with salt and crushed red pepper to taste.

    • Reduce the heat to low and let the chicken simmer in the sauce for 25-30 minutes, or until the chicken is cooked through and tender. Adjust the cooking time based on the thickness of the chicken thighs.

  • Serve and Enjoy:

    • Serve the Spicy Chicken Adobo hot with steamed white rice.

    • Garnish with additional sliced Thai chili peppers for extra heat, if desired.
