STEPS:

  • Preheat Oven:

    • Preheat your oven to 450°F (230°C).

  • Prepare Brussels Sprouts and Shallots:

    • On a large baking sheet, combine the Brussels sprouts, shallots, and lemon slices with 2 tbsp of olive oil, 1/4 tsp of salt, and pepper. Toss to coat evenly.

  • Prepare Chicken:

    • Mince the garlic cloves and mash them with the side of a knife to form a paste.

    • In a small bowl, combine the garlic paste with smoked paprika, dried thyme, remaining olive oil, remaining salt, and pepper. Mix well.

    • Rub the spice paste all over the chicken thighs, ensuring they are evenly coated.

  • Assemble and Roast:

    • Nestle the seasoned chicken thighs into the Brussels sprouts mixture on the baking sheet.

    • Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the Brussels sprouts are tender and the chicken reaches an internal temperature of 165°F (75°C).

  • Serve:

    • Once cooked, remove from the oven and serve the smoked paprika chicken thighs and Brussels sprouts hot.

    • Serve with rice and additional lemon slices if desired.
