STEPS:

  • Marinate the Chicken:

    • In a bowl, combine the chicken chunks with yogurt, 2 cloves minced garlic, 1 tbsp grated ginger, 1 tbsp garam masala, 1 tsp cumin, 1 tsp sea salt, 1/2 tsp turmeric, and black pepper. Ensure the chicken is evenly coated. Marinate for 10 minutes to 24 hours in the fridge for enhanced flavor.

  • Sear the Chicken:

    • Heat 2 tbsp of grass-fed ghee in a large, deep skillet or pot over medium-high heat. Add the marinated chicken and sear on both sides until browned, about 3 minutes. You may need to do this in batches. Transfer the seared chicken to a plate and set aside.

  • Prepare the Sauce:

    • Reduce the heat to medium and add 2 more tbsp of grass-fed ghee to the skillet/pot. Add the chopped onion and cook for about 5 minutes until softened.

    • Add 2 cloves minced garlic, 1 tbsp grated ginger, 1 tbsp garam masala, 1 tsp cumin, 1 tsp sea salt, 1/2 tsp turmeric, and black pepper to taste. Cook until fragrant, about 2-3 minutes.

    • Stir in the tomato paste and cook for another 2-3 minutes.

  • Simmer the Sauce:

    • Increase the heat to high and pour in 2 cups of bone broth and 1 can of full-fat coconut milk. Stir until well combined and bring to a boil. Then reduce the heat to a simmer and cook until the sauce slightly thickens.

  • Combine and Finish Cooking:

    • Return the seared chicken to the skillet/pot and simmer for an additional 5-10 minutes, or until the chicken is fully cooked through.

    • Remove from heat and serve the Indian Butter Chicken with rice, fresh cilantro, a squeeze of lemon, and a dollop of yogurt, if desired.
