STEPS:

  • Prepare the Dough:

    • Add flour, 2 tbsp sugar, salt, and yeast to a bowl and mix.

    • In a large bowl, combine milk, warm water, and butter. Stir until the butter melts.

    • Stir the liquid into the flour mixture and knead the dough for 10 minutes.

    • Place the dough in a bowl to rise for about 90 minutes until doubled in size.

  • Shape the Bao Buns:

    • Knead the dough again and divide it into 10 balls.

    • Roll out each ball into an oval and brush with oil.

    • Fold the dough over, using a chopstick in the middle to leave a little space in the fold.

    • Place parchment paper between the folds to prevent sticking.

    • Place on a baking tray to rise for about 60 minutes until puffed up.

  • Steam the Bao Buns:

    • Steam in a steam pan for 15 minutes.

  • Prepare the Pork Belly:

    • Add pork belly slices to a pan with stock, 1 tbsp ginger, garlic, rice wine, and 1 tbsp sugar. Simmer for 2 hours until tender.

    • Drain and slice into small chunks.

  • Cook the Pork Belly:

    • Fry the pork belly in a pan with a little oil, salt, and pepper until golden brown.

    • Add the glaze mixture (1 tbsp ginger, chili, honey, brown sugar, soy sauce, and lemongrass) to the pan.

    • Bring to a boil and bubble until dark and sticky.

  • Assemble the Bao Buns:

    • Fill your bao buns with the pork belly.

    • Garnish with cilantro, thinly sliced red chili, and sesame seeds.

  • Serve and Enjoy:
