Pitted Dates (15)
Finely Shredded Carrots (1 Cup)
Walnuts (2 Cups, Raw, Chopped)
Vanilla Extract (2 Teaspoons)
Cinnamon (1 Teaspoon)
Ground Ginger (1/2 Teaspoon)

Nutmeg (1/4 Teaspoon)
Almond Flour (1/4 Cup)
Raisins (1/4 Cup)
Cream Cheese Frosting

STEPS:
Prepare the Carrot Cake Balls:
In a food processor, add soaked and chopped dates and blend until a ball forms. Set aside.
Add chopped walnuts, vanilla extract, and spices to the food processor and blend until a semi-fine meal is achieved.
Add the dates and shredded carrots back into the food processor and pulse in one-second increments until a loose dough forms. Be careful not to over-blend.
Add almond flour and pulse to combine. If the mixture is too thick, you may need to remove the lid and stir occasionally.
Once well combined, add raisins and pulse or stir once more to loosely combine.

Scoop out a tablespoon of dough and roll into balls with your hands. Place the balls directly onto a parchment-lined baking sheet.
If the mixture is too sticky to roll, add a little more almond flour to dry it out.
