STEPS:

  • Prepare the Rice:

    • Start by preparing your rice according to the package instructions. You can use sushi rice or plain white rice, whichever you prefer.

  • Cook the Spam and Eggs:

    • Heat a skillet over medium-high heat. When hot, add the sliced spam in a single layer and fry until golden brown on both sides. Transfer to a plate and set aside.

    • Reduce the heat to medium-low. Crack the eggs into the skillet and cook until sunny-side-up. Transfer to a plate and set aside.

  • Make the Gravy:

    • In a bowl, combine beef bone broth, soy sauce, cornstarch, salt, and pepper to taste. Whisk until the cornstarch is completely dissolved. If using ketchup, add it to the mixture.

    • Heat the same skillet over medium heat. Add butter and let it melt, then add diced or sliced sweet onion and a pinch of salt. Sauté until the onions are translucent.

    • Stir in minced garlic until fragrant. Then pour the gravy mixture into the pan. Simmer until thickened, about 4-5 minutes, whisking constantly. The gravy should darken and become lightly translucent. Season to taste with salt and pepper.

  • Assemble the Dish:

    • Divide the cooked rice between two bowls. Top with the fried spam slices and pour some of the gravy over the spam.

    • Place the cooked eggs on top of the spam and rice. Season with a pinch of salt and pepper.

    • Drizzle additional gravy over the eggs and garnish with chopped green onions.
