INGREDIENTS:

STEPS:

  • Prepare the Ingredients:

    • Cut the leeks into thin strips and wash them thoroughly.

    • Peel and slice the carrots.

    • Halve the mini gold potatoes.

    • Cut the fresh salmon into large cubes.

    • Finely chop the fresh dill.

    • Slice the lemon for garnish.

  • Sauté the Vegetables:

    • In a large Dutch oven or stock pot, heat butter over medium heat.

    • Sauté the leeks and sliced carrots until softened.

  • Cook the Potatoes:

    • Add the halved potatoes and chicken or fish broth to the pot.

    • Season with salt and black pepper.

    • Simmer for 15 minutes over medium heat until the potatoes are tender.

  • Add the Salmon and Cream:

    • Ten minutes before serving, add the salmon chunks and heavy cream to the pot.

    • Cook over medium heat for 3-5 minutes until the salmon is cooked through. Avoid boiling the cream.

    • Close the lid and let it sit for an additional 5 minutes.

  • Finish and Serve:

    • Stir in the chopped fresh dill.

    • Ladle the soup into bowls and garnish with additional dill, black pepper, and a drizzle of lemon juice to taste.
