  • Fire-Roasted Tomatoes (2 Cans, Drained and Blended)

  • Beef Bone Broth (1 Cup)

  • Sherry Wine (1 Tablespoon)

  • Cumin (2 Teaspoons)

  • Paprika (1/2 Teaspoon)

  • Chili Powder (1/2 Teaspoon)

  • Salt (1 Teaspoon)

  • Red Onion (1/2, Sliced)

  • Pre-Cooked Carnitas (1 Package, Beef or Pork)

  • Mozzarella Cheese (About 1 Cup, or as Desired)

  • Queso Fresco (1/2 Cup, Crumbled)

  • Cilantro (1 Cup, Chopped or Minced)

 

STEPS:

  • Preheat the Oven:

    • Set your oven to 400°F to preheat while preparing the other ingredients.

  • Prepare the Sauce:

    • In a saucepan, combine tomato sauce, bone broth, spices, and salt.

    • Simmer the sauce mixture for 10 minutes.

    • Add the carnitas and sliced onion to the sauce, and let simmer for an additional 5 minutes.

  • Assemble the Dish:

    • Pour the sauce and carnitas mixture into a small casserole dish (6- or 8-inch round or square).

    • Top with mozzarella cheese.

    • Bake in the preheated oven for 30 minutes.

  • Finish and Serve:
