STEPS:

  • Prepare the Papaya:

    • Begin by peeling half of a papaya.

    • Once peeled, cut the papaya in half. Wrap the half with the skin in cling wrap and save for later.

    • Place the peeled half of the papaya on a plate.

  • Make the Yogurt Filling:

    • In a medium bowl, combine plain Greek yogurt and maple syrup. Mix well until you reach your desired sweetness (start with a small amount of maple syrup and adjust to taste).

  • Fill the Papaya:

    • Add the sweetened yogurt to the center pit of the papaya.

  • Add Toppings:

    • In a food chopper, combine pistachios and pumpkin seeds. Chop into small pieces.
