STEPS:

  • Prepare the Oven and Ingredients:

    • Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper or grease it lightly with oil.

    • Season the chicken thighs with smoked paprika, onion powder, garlic powder, salt, and pepper. Coat the chicken pieces evenly with flour.

  • Bake the Chicken and Zucchini:

    • Drizzle olive oil over the chicken pieces and place them on one side of the prepared baking sheet.

    • Toss the sliced zucchinis with olive oil, salt, and pepper, and arrange them on the other side of the baking sheet.

    • Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and the zucchini is tender.

  • Prepare the Hot Honey Garlic Sauce:

    • In a saucepan over medium heat, melt the butter. Add minced garlic and cook until fragrant.

    • Stir in the hot sauce, chipotle chili powder, and cayenne pepper. Then, add the honey and season with salt to taste. Stir well until the sauce is smooth and well combined.

  • Coat the Chicken with the Sauce:

    • Once the chicken and zucchini are cooked, pour the prepared hot honey garlic sauce over the cooked chicken pieces.

    • Return the baking sheet to the oven and bake for an additional 5 minutes to allow the sauce to coat the chicken.

  • Serve and Enjoy:

    • Garnish the hot honey garlic chicken and zucchini with sliced green onions.
