STEPS:
Prepare the Potatoes:
In a large skillet, heat olive oil over medium-high heat. Add diced potatoes to the skillet and season with smoked paprika, turmeric, garlic powder, salt, and pepper.
Cook the potatoes for 15-20 minutes, stirring occasionally, until they are crispy on the outside and soft on the inside. Halfway through cooking, add the diced onions and continue to cook until both the potatoes and onions are tender and golden brown.
Prepare the Scrambled Eggs:
While the potatoes are cooking, whisk the eggs in a bowl and season with salt.
