STEPS:

  • Prepare the Pistachios:

    • Use a food chopper or processor to pulse the pistachios a few times until they are finely chopped.

  • Make the Syrup:

    • In a medium saucepan, combine the chopped pistachios, granulated sugar, and water. Heat over medium-high heat.

    • Continue heating for 5 to 8 minutes, stirring occasionally. Be careful not to let the syrup boil; if necessary, reduce the temperature. (Note: If the syrup boils, it may develop a green color and become thicker, but it will still be delicious.)

  • Strain the Syrup:

    • Once the granulated sugar has completely dissolved, remove the pistachio syrup from the stove.

    • Pour the syrup through a fine mesh strainer to remove the pistachio chunks.

  • Cool and Store:

    • Allow the syrup to cool to room temperature before storing it in a sealed container.
