Baking Powder (2 Teaspoons)
Low-Fat Greek Yogurt (410g)
Italian Seasoning (1 Tablespoon)
Garlic Powder (1 Tablespoon)
Salt (1 Tablespoon)
Shredded Mozzarella (To Taste)
Sliced Pepperoni (To Taste)
STEPS:
Prepare the Dough:
In a large mixing bowl, combine all-purpose flour, baking powder, Greek yogurt, and your favorite seasonings.
Mix the ingredients and knead the dough for about 5 minutes until it forms a smooth ball.
Shape the Dough:
Divide the dough into 8 equal pieces.
Roll each piece into a small circle approximately 1/4 inch thick.
Add the Filling:
Place about 1½ teaspoons of homemade pizza sauce in the center of each dough circle.
Top with a generous amount of mozzarella cheese and a few slices of pepperoni.
Seal the Pockets:
Carefully pinch all sides of the dough together to enclose the toppings and form a small ball.
Gently roll the sealed dough in your hands, then flatten it slightly to create a stuffed pizza patty.
Rest the Pockets:
Set the stuffed pizza patties aside under plastic wrap while you repeat the process with the remaining dough pieces.
Cook the Pizza Pockets:
Heat a medium-sized nonstick pan over medium heat and add a tablespoon of avocado oil.
Place as many stuffed pizza pockets in the pan as will fit comfortably without touching, as they will expand slightly during cooking.
Get Crispy:
Cook the pizza pockets for about 3-4 minutes on each side, until they are golden brown and crispy on the outside and warm on the inside.
Cover the pan while cooking and add more oil as needed for even browning.
