Yellow Onions (1/4 Cup)
Italian Parsley (1 Tablespoon)
Sazon with Coriander & Annatto and Sazon with Saffron (1/2 Teaspoon)
All-Purpose Flour (1/2 Cup)
Paprika (1/2 Teaspoon)
Whole Milk (1 1/2 Cups)
Nutmeg (1/8 Teaspoon)
Eggs (1)
Sourdough Breadcrumbs (1/3 Cup)
Regular Breadcrumbs (Alternative)
Limes (1-2)
STEPS:
Prepare the Onion:
Add oil to a large skillet and heat over medium heat.
Finely mince the onion using a chopper.
Add the minced onion to the skillet and cook for 4-5 minutes until softened.
Prepare the Ham:
Finely mince the ham using a chopper.
Add the minced ham to the skillet with the onions and cook for 3-4 minutes.
Season the mixture with parsley, Sazon Goya, paprika, salt, and pepper. Stir to combine and cook for an additional 1-2 minutes.
Add Flour:
Add 1/2 cup of flour to the ham and onion mixture. Stir until the ham is coated with flour. Cook for an additional 2 minutes.
Prepare the Milk:
Microwave the milk for 30 seconds.
Add nutmeg to the milk and stir to combine. Set aside.
Combine Milk and Ham Mixture:
Reduce the heat to medium-low.
Gradually pour in the milk, stirring constantly until you achieve a creamy mixture and consistency.
Cool the Mixture:
Transfer the mixture to a bowl and cover with plastic wrap, ensuring the plastic wrap touches the surface of the mixture.
Let it cool completely for 40-60 minutes.
Form the Croquettes:
Prepare three separate bowls: one with the remaining flour, one with the beaten egg, and one with breadcrumbs.
Scoop the cooled mixture into your hands and form it into logs.
Coat each log with flour, then dip in the beaten egg, and finally coat with breadcrumbs.
Place the formed croquettes on a plate.
Fry the Croquettes:
Heat enough oil in a large pan to cover the croquettes, aiming for an oil temperature of around 375 degrees F.
Fry the croquettes in batches until golden brown and crispy, about 3 minutes per batch, turning them to ensure even frying.
Drain and Serve:
Transfer the fried croquettes to a paper towel-lined plate to drain excess oil.
Serve with lime slices and enjoy.
