Garlic (4-5 Cloves, Pressed Through Garlic Press)
Gruyere Cheese (3/4 Cup, Grated, Plus More for Topping)

French Onion Sauce Ingredients:
Olive Oil (2 Tablespoons, Divided)
Ghee or Grass-Fed Butter (2 Tablespoons)
White Onions (1 1/2 Large, Finely Chopped)
Garlic (5-6 Cloves, Pressed Through Garlic Press)
Oregano (1/2 Teaspoon)

Sherry Wine (1/4 Cup)

STEPS:
Preparation:
Gather and prepare all meatball and sauce ingredients as listed for easy access.
Make Meatballs:
In a dish, combine breadcrumbs and milk, allowing them to soak for 5 minutes. Place ground bison in a large bowl.
Mix soaked breadcrumbs with ground bison, parsley, thyme, oregano, rosemary, salt, pepper, minced onion, garlic, Gruyere cheese, and whisked egg. Gently combine without overmixing.
Form the mixture into 2-tablespoon-sized meatballs, roll them, and chill in the fridge for 10 minutes.
Prepare French Onion Sauce:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear and brown the meatballs for 8-10 minutes, then set them aside.
Add the remaining olive oil and ghee or butter to the skillet. Cook chopped onions with salt and pepper until caramelized, about 20 minutes. Stir in garlic, oregano, rosemary, and dried thyme, then add sherry wine.
Stir in flour until combined, then gradually pour in beef stock, stirring constantly. Simmer for 5 minutes until the sauce thickens.
Stir fresh thyme leaves into the sauce, return the meatballs to the skillet, and top with Gruyere and mozzarella cheeses.
Broil and Serve:
Preheat the broiler to high. Broil the meatballs for 5-7 minutes until the cheese is melted and gooey.
Garnish with additional fresh thyme leaves.
Serve the French onion meatballs with sauce and melted cheese over warm bread or mashed potatoes.
