Canned Pineapple Chunks (20oz)
BBQ Sauce (1 Cup)
Soy Sauce (1/4 Cup)
Rice Vinegar (1/4 Cup)
Ginger (1 Tablespoon, Grated)
Chives (Garnish, Chopped)
STEPS:
Prepare Meatball Mixture:
In a large bowl, combine bison, breadcrumbs, milk, garlic powder, onion powder, salt, coarse black pepper, and chili flakes. Mix until well combined.
Form Meatballs:
Shape the mixture into small meatballs, about 1-2 inches in diameter.
Cook Meatballs:
In a large skillet, cook the meatballs over medium heat until browned on all sides and cooked through. Remove from skillet and set aside.
Prepare Pineapple Sauce:
In the same skillet, add the pineapple chunks (with juice), BBQ sauce, soy sauce, rice vinegar, and grated ginger. Stir well to combine and bring to a simmer.
Combine and Simmer:
Return the meatballs to the skillet with the pineapple sauce. Simmer for 10-15 minutes, allowing the flavors to meld together.
Garnish and Serve:
Garnish with chopped chives and serve hot.
