Short Grain Sushi Rice (4 Cups, Cooked)
Salmon (1 Pound)
Cream Cheese (1/2 Cup)
Japanese Mayo (1/2 Cup, Plus Extra for Drizzle)
Sriracha (2 Tablespoons, Plus Extra for Drizzle)
Furikake (1/4 Cup)
Green Onions (Sliced)
Roasted Seaweed (To Serve)
STEPS:
Preheat the Oven:
Preheat your oven to 425°F.
Marinate and Bake the Salmon:
Season the salmon with salt, pepper, and garlic powder.
Bake for 20 minutes, or until fully cooked.
Cook the Rice:
While the salmon is baking, cook your rice according to package instructions.
Set aside once finished.
Prepare the Salmon Mixture:
Once the salmon is done, remove it from the oven and increase the oven temperature to 450°F.
In a large bowl, combine the cooked salmon, Japanese mayo, cream cheese, and sriracha. Mix thoroughly until well combined.
Assemble the Dish:
In a 9x13-inch baking dish, layer the rice evenly on the bottom.
Sprinkle a generous amount of furikake over the rice.
Spread the spicy salmon mixture on top.
Drizzle sriracha and Japanese mayo over the salmon layer and sprinkle more furikake for seasoning.
Bake and Broil:
Bake the dish at 450°F for 10 minutes.
Switch to the broil setting and broil for 3-5 minutes, or until the top is nicely toasted.
Serve:
Remove from the oven and let cool slightly.
Cut into portions and serve with fresh chopped green onions, cucumber, avocado, and seaweed.
