Flank Steak (1lb, Cut into Strips)
Olive Oil (3-4 Tablespoons, Divided)
Red Onion (1 Small, Sliced)
Tomatoes (2 Medium, Sliced to Wedges)
Scallions (4, Ends Trimmed and Sliced into 2in Pieces)
Garlic (3 Cloves, Minced)
Ginger Root (1/2in Piece, Grated)
Aji Amarillo (1 Tablespoon)
Cilantro (1 Tablespoon, Minced)
Using a Wok is crucial for this recipe; a normal pan won't achieve the same results due to its unique heat distribution and cooking properties.
STEPS:
Marinate the Steak:
In a bowl, combine 2 tbsp soy sauce, ⅛ tsp ground cumin, ¼ tsp dried oregano, and 1 tbsp apple cider vinegar.
Add the sliced flank steak and let it marinate while you prepare the other ingredients.
Heat the Pan:
Heat 1 tbsp of olive oil in a large wok pan over medium-high heat.
Cook the Steak:
Add the marinated steak to the hot pan and fry until browned and seared, about 5-6 minutes.
Remove from the pan and set aside. Do not overcrowd the pan; cook in batches if necessary.
Cook the Vegetables:
Heat another 1 tbsp of oil in the same pan.
Add the sliced red onion and cook for 2-5 minutes until softened. Remove and set aside.
Heat another 1 tbsp of oil and add the green onions. Sauté for 20-30 seconds.
Add the tomato wedges, minced garlic, and aji amarillo paste. Cook for another 2-5 minutes until the tomatoes release some of their juices but remain intact.
Prepare the Stir Fry Sauce:
In a small bowl, mix 8 tbsp soy sauce, 2 tbsp apple cider vinegar, and 1 tsp corn starch.
Combine Everything:
Add the stir fry sauce to the pan and stir to combine. Cook for about 1 minute.
Return the steak, accumulated juices, and cooked onions to the pan. Sprinkle over the minced fresh cilantro.
Toss gently to coat everything in the sauce.
Serve:
Serve hot with steamed white rice. Optionally, you can stir fries into the sauce or serve them on the side.
