STEPS:

  • Preheat Oven:

    • Preheat the oven to 350°F (175°C). Line a 6x6-inch baking pan with parchment paper.

  • Prepare Brown Butter:

    • In a small saucepan, heat the unsalted butter over medium heat until it melts and starts to brown, swirling occasionally. Once browned, remove from heat and set aside to cool slightly.

  • Prepare Matcha White Chocolate Mixture:

    • In a bowl, combine the white chocolate and matcha powder. Pour the warm browned butter over the mixture and stir until the white chocolate is melted and smooth. Set aside.

  • Mix Wet Ingredients:

    • In a large mixing bowl, whisk together the granulated monk fruit, pinch of brown sugar, egg, vanilla extract, and salt until creamy and well combined.

  • Incorporate Matcha Chocolate Mixture:

    • Gradually pour the matcha white chocolate mixture into the wet ingredients, stirring continuously until a uniform green batter forms.

  • Fold in Flour:

    • Sift the all-purpose flour into the batter. Gently fold the flour into the batter until just combined. Be careful not to overmix.

  • Bake the Brownie Cakes:

    • Spoon the batter into the prepared baking pan, spreading it evenly.

    • Bake in the preheated oven for 10 minutes.

  • Remove and Finish Baking:

    • Remove the brownie cakes from the oven and gently slam the pan on the counter to remove any air bubbles.

    • Sprinkle the top with flaky sea salt, if using.

    • Return the brownie cakes to the oven and bake for another 5 minutes or until a toothpick inserted into the center comes out mostly clean. Note: The brownie cakes should be slightly soft when removed from the oven as they will continue to cook and firm up as they cool.

  • Cool and Serve:

    • Allow the brownie cakes to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

    • Once cooled, slice into squares and enjoy these delicious Matcha Brownie Cakes!
