STEPS:

  • Preheat Oven:

    • Preheat your oven to 375°F (190°C).

  • Prepare Broccoli Slaw:

    • In a bowl, combine the broccoli slaw, mayo, lemon juice, red vinegar, honey, salt, and pepper. Mix well and set aside.

  • Prepare Lion’s Mane Mushrooms:

    • Pull apart the Lion’s Mane mushrooms into small pieces resembling shredded meat.

  • Cook Mushrooms:

    • Add the Lion’s Mane pieces to a grill or wok pan with a pinch of salt and pepper.

    • Cook on low heat for 10-15 minutes to release all of the water from the mushrooms.

  • Bake Mushrooms:

    • Line a baking dish with parchment paper and evenly spread the cooked mushrooms onto the paper.

    • Bake at 375°F (190°C) until the mushroom pieces begin to crisp, tossing frequently to avoid burning.

  • Prepare BBQ Sauce Mixture:

    • In a bowl, mix the apricot BBQ sauce, olive oil, and chopped green onions together.

  • Coat Mushrooms:

    • Stir the baked Lion’s Mane mushrooms into the BBQ sauce mixture.

    • Return the coated mushrooms to the oven and bake for another 10 minutes.

  • Assemble and Serve Sliders:

    • Toast the slider buns if desired.

    • Build your sliders by placing a generous amount of the BBQ-coated Lion’s Mane mushrooms on the bottom bun.

    • Top with the prepared broccoli slaw and then place the top bun.
