STEPS:

  • Preheat Oven:

    • Preheat your oven to 350°F and spray a 9×9 inch pan with nonstick cooking spray.

  • Mix Wet Ingredients:

    • In a large bowl, mix together 1/4 cup fresh squeezed lemon juice and lemon zest, 1.5 cups almond milk (or milk of choice), 1/3 cup maple syrup, 2 tbsp melted butter, 1 1/4 tsp vanilla extract, and 2 eggs until smooth.

  • Add Dry Ingredients:

    • Stir in 1 cup blueberries, 2 cups rolled oats, 1/4 tsp salt, 1 tsp baking powder, and 1 tbsp poppyseeds to the wet mixture.
