STEPS:

  • Prepare the Dough:

    • In a large mixing bowl, combine softened grass-fed butter, light brown sugar, baking soda, salt, ground cinnamon, honey, and orange zest.

    • Mix by hand or with a stand mixer on low speed until moistened, then increase to medium speed until the mixture becomes light and fluffy.

    • Add freshly squeezed orange juice and egg yolks one at a time, beating until smooth.

    • Sprinkle in the unbleached all-purpose flour and mix well until combined.

  • Shape and Chill the Dough:

    • Knead the dough in the bowl until it forms a smooth ball.

    • Shape the dough into a square, wrap it in cling wrap, and refrigerate for an hour or up to a week.

  • Roll Out the Dough:

    • Bring the dough to room temperature for 20 minutes, then knead until smooth and easy to work with.

    • Dust with flour and roll out into an 8-inch square. Sprinkle both sides with flour and roll into a 15-inch square.

    • Cut into three 3 1/4-inch strips.

  • Assemble the Bars:

    • Pipe or use a Ziplock bag to create a 1-inch wide strip of Divina Orange Fig Spread down the center of each dough strip.

    • Fold a long flap of dough over each strip, brush off excess flour, and roll each bar over with the seam side down.

    • Gently flatten each bar with your fingertips and transfer to a parchment-lined half sheet pan.

  • Bake:

    • Preheat your oven to 350°F.

    • Bake the bars until they are puffed and firm without significant browning, approximately 11 minutes.

    • Immediately cut into about 1-inch pieces and store in an airtight container.
