INGREDIENTS:

Almond Flour (1 1/2 Cups + 1 Tablespoon, Blanched)
Powdered Sugar (140g, I used Powdered Monk Fruit, but any Powdered Sugar will do)
Water (3 Tablespoons)
Almond Extract (1/2 Teaspoon)
STEPS:
Mix Dry Ingredients:
In a large mixing bowl, combine the almond flour and powdered sugar.
Add Wet Ingredients:
Add the water and almond extract to the dry ingredients.
Combine:
Mix until the ingredients come together to form a smooth, pliable dough. If the mixture is too dry, add a little more water, one teaspoon at a time.
Shape and Use:
Shape the marzipan into a log or any desired shape.
Wrap tightly in plastic wrap and refrigerate until ready to use.
