STEPS:

  • Prepare the Oven and Ingredients:

    • Preheat your oven to 355°F.

    • Slice the sweet potato lengthwise into 1-2 cm thick pieces.

    • Arrange the sweet potato strips on a lined baking tray and place the vine tomatoes next to them.

    • Drizzle everything with extra virgin olive oil and sprinkle with salt and pepper.

  • Bake:

    • Place the tray in the oven and bake for 20-25 minutes, or until the sweet potatoes are golden and the tomatoes are blistered.

  • Cook the Eggs:

    • When there are about 5 minutes left for the sweet potatoes and tomatoes, heat a frying pan with a splash of extra virgin olive oil.

    • Crack the eggs into the hot pan and cook until the bottoms are crispy, seasoning with salt and pepper to taste.

  • Assemble the Dish:

    • Remove the sweet potatoes and tomatoes from the oven.
