Olive Oil (1 Tablespoon)
Minced Garlic (1 Tablespoon)
Sweet Onion (1/2 Medium, Minced)
Bell Peppers (2 Large, Diced; One Green and One Red)
Grass-Fed Ground Beef or Bison (1 Pound)
Cumin (2 Teaspoons)
Chili Powder (2 Teaspoons)
Allspice (1 Teaspoon)
Tomato Sauce (1/2 Cup)
Green Chiles (2 Tablespoons)
Black Beans (15 oz, Canned, Drained and Rinsed)
Mexican Shredded Cheese (To Taste, Plus More for Garnish)
Jasmine Rice or Tortillas (1 Cup, For Serving)
STEPS:
Cook the Vegetables:
Heat olive oil in a large nonstick skillet over medium-high heat until fragrant.
Add garlic, onion, and bell pepper to the skillet.
Sauté for 3-5 minutes until the vegetables are softened.
Cook the Ground Beef:
Push the sautéed vegetables to one side of the skillet.
Add ground beef to the empty side and sprinkle with seasoning.
Cook the beef for 7-9 minutes, stirring occasionally, until thoroughly browned and cooked through.
Mix the cooked beef with the sautéed vegetables in the skillet.
Combine Ingredients:
Stir in the tomato sauce and black beans with the beef and vegetable mixture.
Cook for a few additional minutes to combine flavors evenly.
Melt the Cheese:
Sprinkle cheese over the top of the skillet mixture.
Transfer the skillet to a preheated oven at 350°F and bake for a few minutes until the cheese is melted.
