Oats (1 Cup, Ground into Flour)
Gluten-Free Flour Mix (1 1/4 Cups)
Baking Soda (1/2 Teaspoon)
Baking Powder (1 1/2 Teaspoons)
Oat Milk (1 1/2 Cups, Gum-Free)
Apple Cider Vinegar (2 Teaspoons)
Vanilla Extract (1/2 Teaspoon)
Maple Syrup (2 Tablespoons)
Grass-Fed Butter (5 Tablespoons)
Honey Crisp Apples (5 Large, Peeled and Sliced)
Brown Sugar (1/4 Cup, Packed)
Ground Cinnamon (1 1/2 Teaspoons)
Salt (Pinch)
Lemon (Juiced)
STEPS:
Prepare the Wet Ingredients:
In a medium bowl, combine oat milk and apple cider vinegar to create your buttermilk. Let the mixture sit for 5-10 minutes to thicken slightly.
Add vanilla extract and maple syrup to the buttermilk mixture and whisk until combined.
Mix the Dry Ingredients:
In a large mixing bowl, combine oat flour, gluten-free flour mix, baking soda, and baking powder.
Whisk together to evenly distribute the ingredients.
Combine Wet and Dry Ingredients:
Gradually pour the wet ingredients into the dry mixture.
Stir gently until the batter is smooth and well combined.
Cook the Waffles:
Preheat your waffle iron and lightly grease it with non-stick spray or oil.
Pour approximately ½ cup of batter (or the recommended amount for your waffle iron) onto the hot waffle iron. Spread the batter evenly if needed.
Close the waffle iron and cook for 3-5 minutes, or until the waffles are golden brown and cooked through.
Prepare the Apple Topping:
Chop the apples and toss them with the juice of half a lemon to prevent browning.
In a large Dutch oven or skillet, melt butter over medium heat until slightly foamy and light brown.
Add the apples and sprinkle with brown sugar, cinnamon, and a pinch of salt. Mix well to coat evenly.
Cover the pan and cook over medium heat, stirring occasionally, until the apples are tender and caramelized, about 15 minutes.
Serve:
Place the waffles on a plate and top them with the caramelized apples.
Drizzle any remaining sauce from the pan over the waffles for extra flavor.
Dig in and enjoy your flavorful waffles with tender caramelized apples!
