Pasta (8oz)
Butter (2 Tablespoons)
Olive Oil (1/2 Tablespoon)
Salmon Filet (3, Seasoned with Desired Amount of Cajun Seasoning)
White Onion (1/2, Finely Diced)
Garlic (1 Tablespoon, Minced)
Chicken Broth (1 Cup)
Heavy Cream (1 Cup)
Cajun Seasoning (2 Tablespoons)
Lemon (2 Teaspoons Lemon Juice)
Dried Parsley (1 Teaspoon)
Dried Basil (1/2 Teaspoon)
Fire Roasted Diced Tomatoes (Drained)
Parmesan Cheese (1/2 Cup, Grated)
Spinach (1 Cup)
STEPS:
Cook Pasta:
Cook 8 ounces of fettuccine pasta or spaghetti noodles according to package instructions. Drain and set aside.
Prepare Salmon:
In a large skillet, melt 2 tablespoons of butter with 1/2 tablespoon of olive oil over medium heat.
Season 3 salmon filets with desired amount of Cajun seasoning.
Cook the salmon in the skillet until flaky. Remove salmon from skillet and set aside.
Cook Onions and Garlic:
In the same skillet, add 1/2 finely diced white onion and 1 tablespoon of minced garlic.
Cook until the onions are translucent.
Make Sauce:
Pour in 1 cup of chicken broth and 1 cup of heavy cream, stirring to combine.
Add 2 tablespoons of Cajun seasoning, 2 teaspoons of lemon juice, 1 teaspoon of dried parsley, and 1/2 teaspoon of dried basil.
Mix in 1/2 cup of grated parmesan cheese and 1 cup of spinach, stirring until the spinach wilts.
Season with salt and pepper to taste.
Optional: Stir in 1 (15-ounce) can of fire roasted diced tomatoes, drained.
Combine and Serve:
Add the cooked pasta to the skillet, tossing to coat with the sauce.
Flake the cooked salmon into chunks and gently mix into the pasta and sauce.
Garnish:
Serve the pasta topped with shaved or shredded parmesan cheese and fresh chopped basil or flat leaf parsley.
