STEPS:

  • Prepare the Batter:

    • In a large mixing bowl, combine flour, matcha powder, salt, eggs, vanilla extract, and milk. Mix until the batter is smooth and well combined.

  • Heat the Pan:

    • Heat a 10-12 inch circular frying pan over medium-high heat.

  • Cook the Crepes:

    • Once the pan is heated, melt a small amount of butter and evenly distribute it over the pan.

    • Pour a small amount of crepe batter into the pan and tilt the pan to spread the batter evenly, covering the entire bottom. Aim for a thin, tortilla-like crepe.

    • Cook the crepe for about 1 minute on each side, or until lightly browned.

    • Repeat the process with the remaining batter, stacking the crepes as they are cooked.

  • Serve:

    • To serve, fold the crepes, drizzle with honey or maple syrup, and garnish with fresh strawberries and a dusting of confectioners' sugar.
