STEPS:

  • Cook the Noodles:

    • Boil the rigatoni noodles to your desired consistency according to the package instructions. Reserve some pasta water and set the noodles aside.

  • Roast the Beets and Bacon:

    • Preheat your oven to 400°F (200°C).

    • Wrap the beets in aluminum foil and bake for 30 minutes until tender. Allow to cool.

    • At the same time, bake the bacon until crispy, then crumble into bits.

  • Prepare the Beet Sauce:

    • Once cooled, peel the beets and cut into chunks.

    • Combine the beets, 3 tablespoons of goat cheese, 1 tablespoon of olive oil, 1 tablespoon of pasta water, a pinch of salt, and cayenne pepper in a blender. Blend until smooth. Adjust seasoning and add more pasta water if a smoother consistency is desired.

  • Assemble the Pasta:

    • Add the beet sauce to the cooked noodles and toss to coat evenly.

    • Serve the pasta topped with bacon bits, pistachios, fresh mint, and additional goat cheese as desired.
